Today we're launching Veggie Mush v2! Here's what we set out to accomplish in this update:
Use organic ingredients for any high pesticide ingredients listed in the dirty dozen.
Reduce oxalate content for each meal.
Organic Ingredients
Ideally we would use only organic ingredients for Veggie Mush to reduce our pesticide exposure and support more environmentally sustainable farming practices. However, adding this restriction adds to costs and increases the difficulty of sourcing our already slightly niche dehydrated ingredients.
To strike a balance between health and cost, we decided to source organic for all the foods listed on the dirty dozen list, which are the 12 foods with the highest levels of pesticide use and therefore the ones that are most important to source organic! And since we only had to source a few of our ingredients at higher cost, we don't actually need to increase the cost of Veggie Mush.

Reduce Oxalate Content
Oxalate is a chemical that is found in most plants as a part of their defense mechanisms. Oxalates don't provide any known nutritional value themselves and they have a couple of scientifically established negative effects when consumed in high quantities:
They increase the risk of kidney stones in people who form oxalate kidney stones (75 - 80% of kidney stone formers)
Oxalates are antinutrients that bind to magnesium and calcium and reduce the amount you absorb.
Since oxalates come from plants, fully plant-based diets tend to have higher levels of oxalate. The v1 version of veggie mush was much higher than the average American dietary oxalate intake. The v2 version of veggie mush has about 30% as much oxalate content as the v1 version and is on par with oxalate intake of the average American diet.
